Here is our favorite recipes for Chicken Chili here at Sustainable Kentucky. Perfect to put in the crockpot in the morning before a long day of work in the garden!
2 cans (15 oz. each) Great Northern beans, drained
4 1/2 cups chicken stock
1 package (1.8 lb) boneless, skinless chicken thighs, cooked and shredded (We prefer pastured chicken!)
2 red bell peppers, seeded, cored, and chopped
1 onion, chopped
1 can (4 oz.) diced green chiles (Cut back if you don’t like it too spicy.)
2 cloves garlic, minced
2 cups diced tomatoes
2 teaspoons cumin
1 teaspoon salt
1/4 teaspoon fresh ground pepper
2 teaspoon cornstarch
1 bag (1 lb.) frozen corn (or fresh if it’s in season!)
1 tablespoon fresh oregano, minced
1. Combine all ingredients except oregano in a six-quart crockpot. Set to low and cook for eight to ten hours.
2. Before serving, stir in oregano. Serve.
